Guest Chef
at Szia Szia
Tooogether's lángos, guest-cooked by Linda Nübling at SziaSzia's stall on Viktualienmarkt. Szia Szia specializes in Hungarian food, serving lángos both classic and elevated. My take on an elevated one was named "Jerk Joint" – Jerk chicken or jerk jackfruit, two kinds of pineapple, BBQ sauce, fresh herbs.
Where jerk chicken comes from Jerk chicken is a traditional dish of the Maroons, an ethnic and cultural community of enslaved people originally from the African continent, who marinated meat in spices like cloves, allspice, Scotch bonnet, and thyme, then smoked it over pimento wood to make it last longer. The method blends African and Indigenous cooking techniques. Today jerk stands for Jamaica's spirit of resistance and its culinary identity.
